Isaac Bancaco, Chef de Cuisine, Humuhumunukunukuapuaʻa at the Grand Wailea Resort & Spa will conduct a Grown on Maui chef demonstration on Monday as part of the ongoing Grown on Maui series.
Chef Isaac is a next generation rising star chef, born and raised in Maui.
He has worked with Ming Tsai at the famed Blue Ginger restaurant, and with Roy Yamaguchi as sous chef at the Roy’s restaurant in Los Angeles.
Chef Isaac maintains a commitment to source as much ingredients as he can locally.
The localvore menu at the Humuhumu restaurant showcases a back to basics philosophy balanced with top-level training.
Chef Isaacʻs demo on Monday will feature fresh, fall produce grown on Maui. Chef Isaac will be preparing Kula Country Farms Kabocha Squash “Chicken Papaya” with crispy ginger free range chicken and coconut broth.
The pumpkins from the Kula County Farm are grown by third generation farmer Chauncy Monden.
In an effort to showcase what Maui grows, the Maui County Farm Bureau partnered with Whole Foods Market to present the Grown on Maui chef demonstration series.
The series began as a month-long special in September, but will be expanded to feature a Maui chef on the first Monday of each month (with the exception of October).
The chef demonstrations are free and open to the general public.
The presentation by Chef Isaac Bancaco takes place on October 24, from 5:30 to 6:30 p.m. at Whole Foods Market, Kahului.
